Currently I use ext4 for most of my servers and computers. But having snapshotting would also be nice. Does kopia transparently use xfs snapshots? Is there a way I can use xfsdump with kopia easily?

Kopia does not support any snapshot-ting “natively” but provides you with mechanism to add its support easy. Have a look at:
As long as you know how to take snapshot and read from it everything else is easy.
